The Wilton® School of Cake Decorating and Confectionary Art is a private vocational school that has been the world leader in cake decorating education for generations. Elsa uses the Wilton method of cake decoration and each course follows a specific syllabus:
Course 1, Discover Cake Decorating:
Students get to decorate a cake in three of the classes in this course.
* Angle
* Pressure
* Buttercream: how to make it and learn its different consistencies and uses
* Writing
* Smoothing and decorating
o roses
o sweet pea
o drop flowers
o shell border
o dots
o star tip
o leaves
o figure piping
* Pattern transfer technique
Course 2, Flowers and Borders:
* Flowers using meringue powder royal icing:
o chrysanthemum
o daffodil
o pansy
o primrose
o daisy
* Color flow — also known as run sugar
* Basket, Rope Border, Reverse Shell and Rosettes (students make a basket weave cake with flowers in the last class)
Course 3, Fondant and Tiered Cakes:
* Piping flowers using a lily nail:
o Easter lily
o poinsettia
o petunia
o morning glory
* String work, brush embroidery, garlands, bead and ruffle borders
* Fondant techniques, covering a cake, how to use fondant, fondant rose and bow
* Tiered cake assembly (students make a tiered wedding cake in the last class and a fondant cake in the second week of class)
